La Salada is husband and wife team Toni and Anna Carbo who make delicious natural wines in Penedes, Spain.
A light (10.5%), saline and mineral blend of Macabeu and Xarel. Half of the Macabeu was harvested very early in August and macerated on skins for a week. The rest of the Macabeu was harvested a week later with the Xarel-lo and pressed directly. Fermentation was done in stainless steel before being passed to concrete vat, where it was left for 8 months before bottling.
This wine is a lot fresher than wines typically of the region. Citrus aromas and mouth wateringly zesty finish. Perfect pairing for seafood or to be enjoyed on its own.
